ABOUT Don't Tell Charles Workshop

Established in 2013 as a specialty coffee and dessert house, DTC has grown into an industry leading cake studio influencing design trends and cake decorating techniques in Australia and all over the world. They are home to the original Concrete Cake, a design which is rapidly gaining popularity due to its unique and striking simplicity. So popular that we are now holding regular sold-out Concrete Cake workshops in Melbourne, interstate and overseas. 

Most workshops are held by Founder and Cake Wizard, Thao Pham. Thao also runs private one-on-one workshops and travels overseas to teach they signature techniques including the Concrete Cakes,  Smooth Buttercream, Watercolour Buttercream, Black Ganache etc. 

In this hands-on workshop, you will learn various techniques in order to recreate DTC's signature watercolour cake using real delicious ingredients. You will also learn how to make DTC's signature chocolate sail plus safely prep and decorate with fresh flowers. Your delicious creation is yours to take home and share with friends and family.

The class will cover:
• Cake design & planning
• How to make DTC buttercream.
• How to cut, stack and fill a round cake
• Colouring buttercream with gel colours
• How to render smooth buttercream and achieve razor sharp edges on a round cake
• How to achieve DTC's signature watercolour buttercream finish including the middle
• How to make DTC's signature white chocolate sail
• How to safely prepare and decorate with fresh flowers
• Many tips and tricks

This school holiday we are hosting a kids cupcake class for age 8+.

Chef Minila is a Patissier and Chocolatier from India. She represented India in the Coupe du Monde de la Patisserie (Pastry World cup) in the year 2017, ranked no:16 in the world. Minila has teaching experiences from the Academy of Pastry Arts, an international pastry school. She specializes in chocolate work, modern french pastries and novelty cake decoration. She was featured in DW tv as one of the best pastry chefs in India. Trained by various MOFs around the world she is passionate about teaching pastry and cake decoration.

ABOUT CAKES BY CLIFF

For the most of 2014, Clifford (Sydney, Australia) was baking goods on a weekly basis for family & friends and decided to pursue his new found passion.
In 2015, Cakes by Cliff was born creating cakes for all occasions whilst working full time. Clifford today continues to create and decorate cakes as a part time hobby.

His cake decorating artistry + style is derived from his architectural studies, his love of geometrical shapes, patterns and unadulterated flair for flavour combinations. 
As of today, Clifford has been involved in many creating collaborations for brands, wedding, special events and various magazine publications.

He has also travelled both locally and overseas to teach his own cake decorating tips to many baking enthusiasts. 

Aside from Cakes & Desserts, Clifford is also passionate about photography, capturing the small candid moments.

Classes will include covering techniques using fondant, sugar flowers arrangements and how to colour cake or flowers using air brush gun. Anita will offer hands on and step by step instruction on how to decorate your very own cake.

Christy Tania is an internationally acclaimed pastry and dessert chef. Widely known for her presence within Australia MasterChefs most notably and other TV shows in Australia, Christy is considered as one of the most respected pastry experts in the industry. Famous for her whimsical-meets-elegance creation, she continues to push the boundaries of Australia's Pastry scene.

We are taking part in the beautiful traditions of Thai culture at the Loy Krathong Festival on Saturday November 12 from 4pm to 10pm.
Experience the magical energy, sounds and flavours of Thailand and join them in honouring the life of King Bhumibol with special musical performances composed by His Majesty. 

Float your Krathong on the Parramatta River carrying your prayers and wishes for a prosperous future.

In the spirit of Good Food month. We will be designing a special 7 deadly menu together with our neighbours (Bar Chinois, Mekong, Lower Mekong, Bistrot Gavroche, Spice Alley @ Spice House, KYO-TO). There will be live performances, musicians and dancers performing on Kensington St.

A percentage of the proceeds of the exhibition will be donated to OzHarvest.

As part of the Good Food month in October. We are participating in this year's Parramatta Lane festival, you can find us in Leigh Memorial Uniting Church. We will be bringing our most popular desserts every night from Tuesday 11th to Friday 14th Oct, from 5pm.

Other than our sweets there are also an awesome line ups of bazaar, French-inspired eatery, a Tokyo neon playground and an array of Asian street food, alongside craft beers, cocktails, live music and art installations.
